On a conworld like Earth, where almost all life has evolved like on Earth, a phylum has.evolved, similar to mollusca, but its foot is a layer of muscle like tissue sorrounding the viceral mass, fusing with it at some points, and the shell is thin, but it's poisoness. People eat it by drowning it in water mixed with vinegar, which not only breaks down the nonorganic components of the shell, but as it's dying from vinegar poisoning, denatures the toxin. Is this plausible?

I see nothing implausible about it. Basically, you're describing escargot.

I'm not asking about the idea of eating the animal, I'm asking whether the biology (The difference between this phylum's "foot" and the Molluscan "Foot", the thin shell, the toxins) is feasible. Also, whether it's chemically possible for vinegar to break down a thin shell AND denature the toxin as the animal is slowly poisoned by it.
Though it might be asked how, if toxic, people discovered a way to render it safe that also happens to remove the shell. The idea is is that someone was transporting the creature inland as a curiosity, and to preserve the flesh for the sake of its shape, pickled it in vinegar alive, and they saw that the shell dissolved, and then a domestic animal ate it, and lived, causing people to experiment on other animals and slaves.
