It is probably just a monophthongal realization of /ej/ though in closed syllables, the original /e/ vs /ɛ/ distinction in earlier stages disappeared in some way. All other Romance languages have a more widespread /e/ vs /ɛ/ distinction. Spanish also has no /o/ vs /ɔ/, as /ɔ/ became /wɛ/ or /we/.
