Ah. Possibly a slight misunderstanding: although veur a magrir emphatically does not mean "starve", the usual meaning of magrir alone is "starve".

is it something along the lines of "to do penance"? ie "to fast"? or is it more just "to live humbly"?

Oh, I had kind of just assumed it was just there to connect the verbs and didn't have much meaning itself:

I may have overstated the matter to be honest – b
it may help to know that the meaning is more like "up to, until" in this expression, but a magrir is a particularly idiomatic construction.
